I don't think you can go wrong with this recipe, Mom! We ate at Cafe Rio first (we don't eat out often, but every once in awhile we go), and then made the copy-cat recipes. They are very similar, but we prefer the homemade. Kelli and Patrick had never eaten at Cafe Rio, but had made it at home. When they came up here and ate at Cafe Rio, they, too, liked the homemade stuff better.
We tried a new recipe last weekend (found here: http://realmomkitchen.blogspot.com/2008/05/lauras-version-of-cafe-rio-sweet-pork.html). It was really yummy, and didn't have the onions that Becky Higgins' recipe would have (in the salsa).
Allison, I am gonna try it... I promise. Glad to know it needs sugary pop...I hid one of Kayty's cans of sugar free Dr. Pepper (imitation). Now, is that the red enchilada sauce?
Yes the red enchilada sauce. And, I'm not sure if you know this, but never cook with sugar-free soda. Aspratame turns toxic once it is heated to above 86 degrees.
I remember, plus I heard it HAS to be the sugary stuff...Got the red enchilada sauce today at Food City...on I go! Thank you so much, my dear sweet daughter!
