Pioneer Day a la Phoenix Arizona is NOT much of a celebration. No parades. No fireworks. No holiday. Like Utah. So, I had my own special celebration: Pioneer Chicken Stew (so Kayty would eat it...beef-hater) and green corn bread. Yep, Dee grew green corn, we dried it, I ground it, and made corn bread. Alas, the first time I use a recipe, I don't defer from the original, and it was too salty...so Beau got the rest...but the family suffered through.

| Kayty made up for the saltiness by adding peanut butter and a layer of mini-chocolate chips. Not very pioneer-ish in my opinion! |
